There are different types of rice grains. Long grain, medium grain and short grain are the types of rice grown in the United States. The different types of rice cook in different ways.

Long grain rice stays separate and fluffy when it is cooked.

Short grain rice is more sticky. The grains of this type of rice stick together. They are ideal for using in puddings. Italian people use this type of rice to make risotto. Risotto is a delicious dish made of rice and has chopped meat or cheese and vegetables in it.

Medium grain rice has a soft creamy texture when it is cooked. It is ideal for making desserts.

Rice is easy to cook. It must be cooked in liquid. People cook it in water, juice, milk or stock. Stock is the broth that comes from boiling vegetables or meat in water.

When rice cooks it absorbs liquid. It fluffs up to three times the size it started. To cook white rice, you need one and three-fourths cups of water for each cup of rice. Boil the water and when it is boiling add the rice. Stir the rice and then turn the heat down. Slowly cook the rice for twenty minutes. The rice will take in the water.

Different kinds of rice take longer to cook. Brown rice must be cooked longer than white rice. Brown rice is chewier in texture. It has a delicious nutty flavor.

Rice is cooked in many different ways around the world. It is eaten in many different ways. In China, baskets are often used to steam the rice. The baskets are placed over boiling water and the rice cooks in the steam. This is a very healthy way to cook rice.

In India and China and parts of Europe the rice is sometimes fried. Spices are often added to the rice to make it taste delicious. Some of the spices they use are saffron and turmeric. These spices turn rice the color yellow.
